Keep loaves well-wrapped in plastic and freeze the same day you buy them.
To serve: thaw the wrapped boule on the counter 4–6 hours.
For a crisp crust, unwrap & warm in a 350°F oven for 8–10 minutes or, if reheating straight from the freezer, unwrap, sprinkle a few drops of water on top, wrap loosely in foil, and warm about 15–20 minutes.
🥖 Freezing sourdough slows starch retrogradation so when you thaw and toast it later, your body digests the starches more slowly. That helps steady blood sugar, supports gut health from the natural fermentation, and preserves nutrients without additives.
Made with unbleached flour, sea salt, baking powder, vegetable shortening, and water. Soft, chewy, and lightly blistered, each tortilla is hand-pressed and hand-rolled, with parchment between each for easy storage and freezing.
Same dough, two finishes. “Schooched” cookies are rounded with a cookie cutter for that perfect café shape, while “Smashed” cookies spread naturally for a chewier, crinkled texture. Just text your preference when you order.
